Planning to keep it as stock as possible, but I would like to at least have it bootloader unlocked first. Can anyone confirm if Android Pay still works with just unlocked bootloader, but no root?
Yes, Android Pay does work with an unlocked bootloader on any phone that isn't rooted. Android Pay only checks if the phone is rooted and is running a 100% stock rom.

What about this "breaker" that occurs on the 6P when you unlock the bootloader, do we have to worry about this on the 5X?

A locked bootloader will likely mean no custom rom support for the Verizon Pixel I assume, but there's still a possibility for root right?

Not so far, root will be increasingly harder as Google is locking down android step by step.

Sure they can unlocked, but rooting the device and still be able to boot the phone is getting harder and harder according to developers.
This article from Android Central discusses why having a locked bootloader and Nougat out of the box may mean no root. To me it sounds like if you can unlock the bootloader then you can load a non-stock ROM and root.

So it seems Android Pay has been updated to not work with an unlocked bootloader. Locking the bootloader on the 5X seems to wipe the phone. This is a problem for me because I need it unlocked to temporarily have root to install Google Assistant. I unroot and lock the bootloader to use Android Pay but the wipe gets rid of Google Assistant. Is there a way to relock the bootloader so Android Pay works without wiping the phone so I can keep Google Assistant?

No.
_Locking_ the bootloader (from previously having it unlocked) won't wipe as far as I know. Or is that changed with Nougat? Unlocking it again will however...

It's changed on specific devices to also wipe when locking. I believe the devices consist of Nexus 5X, Nexus 6P, Nexus 6, & Nexus 9. I've figured out a work-around where I can install a custom kernel and get Android Pay working again without having to lock the bootloader allowing me to keep Google Assistant as well.

I purchase a 1+3 a week ago. I have everything setup has i wanne but my concern if the phone goes into bootloop or something goes wrong. Would u think im ok woth a locm bootloader or unlock bootloader is a must
Unlocking bootloader is only necessary if you want/need root and other modifications. If you're satisfied with the phone in its current state and only plan to use official ROMs, you don't need to unlock it.
Bootloops an similar issues are very rare on unmodified devices, no need to worry about this.
Besides, you can always factory reset or sideload stock ROM even with locked bootloader and stock recovery.

I am buying a used phone and would like to confirm if it can be rooted before purchasing. Can all versions be rooted, or only ones that can have bootloader unlocked? How can I check if bootloader can be unlocked? It seems that all Canadian phones cannot have their bootloader unlocked.
UPDATE: I can't even a find a non-abandoned thread for rooting this device. Could someone be so kind as sharing link to how to root, assuming unlocked bootloader?
Can I still get an OTA with the bootloader unlocked? I know I have to be unrooted, but I'm getting the phone today, so I'm not sure if I should try for the update before I unlock the bootloader. I always used a custom ROM on my Nexus 6P, so this is new for me.
