Unfortunately no, it doesn't work like that.. The security update and OS update are not modular components, you can't mix and match to suit preference/taste.
If you want the security update you will have to download (and install) the update that is provided in it's entirety.

I have, but don't ask me how...I do nothing special for thta. My watch updated "alone" with my MATE 8 which is already NOUGAT with Play Store 7.04.09 since 3 days

Because update is based on Android Wear 1.5.0
Can anyone confirm which file in this download is the bootloader? The root bootloader file is only 1KB, is that normal? Within the Patch folder there is a boot.img.p file but that isn't really a bootloader file?

it doesn't look like there is a new bootloader with this update.
boot.img is the kernel, not the bootloader.

Google still provides 7.1.1 with the latest security updates. If you want to go the OTA route that doesn't require wiping data, follow the directions at the top of the page in the first link.

You got that from settings > about? That's from the ROM base. You could update firmware to get any that are provided for that, but otherwise you'll have to wait for the developer to update the ROM with a new base.
Truthfully though, it's nothing to worry about. Concern with new possible exploits are mostly overblown. They are discovered by security companies and more times than not, hackers haven't discovered it themselves yet.

I have disabled system upgrade to avoid battery drain in 7 or 8. My question is, how do I get security upgrade if I stay on V6? Is there flashable zip from Moto?

No way to do this, especially on stock rom, to get the last security update from motorola (which is Little older) you will need to update all system updates from them, standalone security updates os feature that get announced on android q which is not officially update by motorola.
I am wanting to get the latest security updates for the Pixel 3 XL but do not want to upgrade to Android 10 (for the time being).
I saw the latest update for Android Pie for 3 XL was August 2019.
Is there a way to get the current security update without being forced to upgrade to Android 10?

No, the latest updates are all on 10. Is there a reason you haven't taken any 10 updates? If your holding out for a Verizon bootloader unlock, don't hold your breath. No offense to Fern and whoever else is working on it, but I don't think it's going to happen.

Plus...I've read a good few posts where people aren't happy with battery life and prefer going back to Pie.
