From what I've read, not all S2 have NFC built in them...

That's the international version. The T-Mobile S2 has NFC. Also the person right above me may be right. Do you have it enabled?
Its in Settings > Under Wireless & Networks click More > Make sure NFC is checked and Android Beam is enabled
What rom are you on? And all that..?

I noticed my nfc doesn't seem to work on the new cm10.1 and AOKP 4.2.2 roms bit works fine on many others..

If you are using the factory battery you should be fine.
I believe the NFC antenna is part of the battery, I have three batteries and two nfc works and with one it does not. So I am pretty sure that is correct, but if you have a factory battery that should not be your problem.
I have used CM 10.0 and I am currently on SlimBean nfc worked on both for me.
Is that possible to have a 3g/4g stick and use it with a USB cable to my phone? Has anyone tried it?

Is the USB modem supported in Linux? Most likely not, and that doesn't leave a bright future for Android.

No.. They are supported.. Maybe not all, but I've seen many tablets with android a.k.a Linux that support internet via 3G/4G dongles.. Maybe we need some application for them to run, I've no idea atm.. Cheers

What I know of is CDC (needs kernel support) or proprietary protocols like MS' rndis;
It depends on the piece of hardware though. If i was the OP, i would buy a 3G/4G usb modem WITH WIFI HOTSPOT.
Edit: Something like this but for tuna, ofc.
I found another thread on how to make every 3g dongle work with tablets so I think I can try this method. WiFi hotspot will be the best idea but costs money and the plain 3g dongles ate given for free with a contract.

Most Modems are Sim based. If you need it for your mobile phone, remove the sim from the Modem, and insert it into your Phone.
I was able to use PPPWidget (go to the market to download) and follow the related forum.
I'm using a 3g dongle like a charm

True, but then you wouldn't have a voice service, only data. But yeah, also an option if voice is not needed here.
I have a T-Mobile S3 and a Nexus 7 but they aren't interacting with one another via NFC/Android Beam. GS3 is running root box and the N7 is running Paranoid Android. Anyway to test which one isn't working? I've thought of buying tags but want to avoid buying other items unless necessary.
EDIT: I recently had my S3 LCD Replaced but I always assumed the battery is what allowed NFC to be used and the battery (as far as I know) is original.

Nfc is built into the stock battery.
Get nfc tag info from the store and test on any rfid tag, such as security tags.
