Is it possible to install Google Now as an APK?
Or, do we have to move up to the JB framework? It's just that the JB ROMs are so new right now, but it would be cool to have now, now!

I do not think this is possible, and I'm sure eventually someone will tell you about incompatible framework and how sense only works on sense roms.
I would try downloading a sense rom and digging for the independent .apk in the zip file. But that's me.
Well I knew that most of sense relied on sense framework but didn't know whether the gallery itself did. I'll try it out and see what happens.
I just discovered BNC-GIO-v1.0-R2 rom and it looks quite promising. But most of stock apps were trimmed out. I wanted to put in again Memo but was not able to do it by copying it's apk to system/apps with root explorer and giving the apk all permissions. Does anyone know if there's another way to install stock apps on this rom?

It won't work unless it has the Samsung TouchWiz Framework like all stock ROMs have. I'm not sure what Delanoister based his rom off of, but I believe it's based off of CM7 and not the official 2.3.6 firmware. I think that BNC-GIO-R1 is based off of the official 2.3.6 firmware, so you can try that and the stock apps should work...
I was just wondering if it is possible to install these apk files onto say, an origional jelly bean rom? I mean can I just run these apk in the new system and will they install and work on the new ROM? I mean I don't expect Sense 4.0 to work, but will the HTC clock work? how about the HTC dailer? I want to try Jelly Bean but I think HTC's apps are just more polished than the alternatives you find on Google Play.
btw I have the stock rom atm.

As long as these apk's don't require any "non-standard libraries" you should be fine, but chances are that most system apk's by HTC will require HTC specific libraries.... so it will most likely fail.

If it is aosp based rom... U get heaps of themes on Google play... If u r running sense based rom. Then check apps and theme section.... Every rom got their individual theme support..
For asop based rom.. Install the theme app like usual apps from Google play store.. U gta install it via theme engine..
For sense based... They have ota support like viper x rom or install it via recovery..

And if you decide to flash a theme, make a nandroid backup before. When it does not work somehow you can easily restore !
One thing: If you are still on Stock ROM, most of the themes here will not work because Stock is odexed and the themes are made for deodexed CustomROMs.
The Apps you downloaded from PlayStore will download automatically again when you flash a CustomROM and tick "save my device with google" (dont know exactly what this point is called when setting the device up, because here it´s called "Gerät über Google sichern" )
The same for contacts/calendar, if you sync them via google, they will be synced with the new ROM too.

If you want to install new themes then you have a few options, you can continue to use the stock rom that you are on right now and look for some themes that will work with Sense; the playstore is the best place to get these themes to use in conjunction with the launchers, for example Go Launcher, Nova Launcher etc.
Your other option, which is more fun, is to install AOSP roms and then you will be able to install a lot of smexy custom *themes

I have been searching (and perhaps I'm not that good at it) for a package, or similar, with all the applications added by Samsung. I would like to be able to add some of the applications from the stock Samsung ROM to for example a CM10 ROM.
Can anyone direct me where to find this?

Sammy apps dont work on Cm10 or any Cm Rom.
Anyway you can find the stock apps in any custom rom. Download any Custom Rom (Full Versions not Lite) Open the zip. >>system>>app = all apps there which you want.
