I don't quite understand your question whether you are on 12 planning to switch to 11 or on 11 planning to switch to 12.
I may have (I really forgot, but my miui had one really slow update process) updated my miui to android 12, and installed lineageos 18.1 (android 11) and I have no problems so far aside from the auto brightness acting erratically.
Check the recommended firmware required by the custom rom

There are two versions of miui rom basically...
1) CM based android
2) sense based android
You can get latest multi language rom from

Miui rom is updated weekly so you can grab the latest version when you download..
Earlier sense based miui rom was android 4.1 and cm based one was 4.2 android.. But now both sense and cm based are android 4.2

Quick question: If I have Android9(Pie) and I want to download for example Lineage OS Android10 based. Is it ok or I should only download Custom rom wit the same Android Version as mine? Sorry i'm so bad talking in english.
I was in Android 6 (On S7) until yesterday. Installed Lineage 17.1 (Android 10) and it works.

Follow the device specific installation guide. Generally it is recommended to have latest available stock ROM installed before going to custom ROM.
I want to flash a custom ROM on my Redmi 7. Since many options aren't available, i want to know which is the most stable ROM available for my device.

I want to try stock android, suggest the most stable ROM. Low features are okay for me.

In that case, try https://paranoidandroid.co/downloads/onc . I personally used it for long time and found it to be one of the best among the custom roms for redmi 7.
I use the official LOS 17.1. It's mostly stable and has up-to-date security patch. It might be a bit barebones when it comes to customizations.
Then there's Paranoid Android, I haven't tested this one but you should take a look at it.

Is this actually android 10 or is it only with android 9, i want to confirm this from you because i dont want to flash a rom so many times
Lineage OS 17.1 is the most stable and fast ROM you can probaby flash. However if you want Android 11 I would recommend PixysOs, I'm using it as my daily driver and have no issues with stability or speed.

Practically all of them are stable and bug free.
I advise you Ressurection remix (last build), if you wish to customize your phone. Or Pixel Experience if you want a rom with a stock look.
LineageOS, as you can lock the boot loader and receive flawless OTAs.
