As far as I know, none of the Swift themes are compatible with Android 12. In fact, I'm not even sure if it's compatible with Android 11.
There are a few Substratum themes compatile with Android 12 that might give you a similar effect.

I've tried Swift Dark, Mono, and Default dark theme. No of them seem to theme the android UI interface. Does anyone have success with any other theme ?
I have tried several popular themes and they all work great, but the Google keyboard never gets themed on any of them.
Is there a specific setting I'm missing ?
You can theme Gboard with backgrounds in the app already. Not as much as Swiftkey but still.

You could give Pixel 2 ROM a try. I don't have any experience with it, but it looks up to date now.

how about Andromeda and Substratum? (If you dont want custom roms)
[PC/MAC/LINUX] The official, full Andromeda thread for Substratum [Android 8.0.0+]
You can then install Pixel Theme from Playstore -
[Substratum] Pixel Theme
then just activate these settings Android System - Accent color - Blue
and
System UI for Pixel navbar (if you want).
I don't know about Night mode tho. You can either download some dark theme for Substratum. I can reccomend Swift Dark Substratum Theme +Oreo & Samsung theme (i'm not affiliated or something, I just tried many free dark themess and this one is excellent, even if you have to pay).

INSTALLATION INSTRUCTIONS:
1 - Download and Open the Theme
2 - Open Substratum app
3 - Click on Dark Material
4 - Inside Dark Material you can click on the overlays that you would like to install (keep in mind that some apps, mainly Android system, have different variants that you can choose)
5 - Click the floating button down the bottom and select Build & Enable
6 - Once that finishes compiling/installing with no errors, wait until SystemUI restarts
7 - Enjoy
