If I root. Will I lose access to OTA updates?

Yes, you can see the updates but it is not upgradable.
Actually if you have just root you should be able to update via OTA as system status should be recorded as Normal
If you are on a custom kernel or recovery image (e.g. CWM) then system status will be reported as modified and you will not be able to accept any OTA's.

Do you know other methods? Because only N7000 and i9100 has the root through original recovery mode.
I test it, OTA disabled without kernel

yes, but you also need to flash the stock recovery. after you get the OTA, you can unlock and install TWRP again.

Does OTA updating work while bootloader is unlocked? Or does it not work only when rooted/custom recovery?

Having an unlocked bootloader does not interfere with accepting an ota, root, exposed , TWRP recovery and any other alteration will cause the ota to fail.

You have to reflash stock. Root and TWRP will cause OTA updates to fail.

Why would you take a chance and end up hard bricked? I gotta bang my head against the wall as you already have TWRP installed and you can flash my nougat stock 7.1.1 rom which has the July 1st security update.

As long as you updated through the update center it's ok. Just don't use LG Bridge to update.
