It appears to sharpen the resulting image slightly and increase contrast in the mid-tones.
Anybody know of a way to enable this by default instead of the HDR?

Try checking Camera > Settings > Picture size, make sure it's 5MP.

Moto X Pure and LG Nexus 5X both are LCD and both have Ambient Display/Moto Display.

According to a Q&A from Android Central people it does not which is a slight bummer. I have not had a phone with it for a few years. Going to take some time to adjust.
But it does have double tap to wake
Ambient display on an LCD phone would drain too much battery anyways

I can't find the color WHITE or SPOT COLOR (where you touch a color and it gives you that color).

Are these the settings you are referring to? Just click the pen "abc" icon at the top, and the window pops up. You can touch the center of the color wheel to get white.
