I'm currently S-OFF and I have the stock WWE rom with the stock recovery.
I can't find a guide to systemless root my device and keep everything stock to keep receiving OTA updates.
Should I just follow the SuperSu steps from this guide:

And in the end restore the stock recovery image or is there a simpler method?
I did follow the steps on the link above and I believe I have systemless root

for flashing or sideloading the 2.19 ota we have to unroot first? cause I used Method 3 to root in the root guide.

I wanted to download the new lollipop update, but the OTA fails. The reason is: I unlocked the bootloader (without root).
What is the fastest way to update to 5.1? Is there any way, keeping my data?
If not, what is the best way to backup these data?

Do you have root and a custom recovery? Then you flash a pre-rooted ZIP without wiping your data.
You could also do a nandroid backup priop to this in the recovery.
Otherwise, you may want to root your 5.0.2 and then install the custom recovery.
I am not sure if full backups without root are currently possible.

I want to describe my solution shortly:

2. I did a backup with CWM

So i got Recovery + root + 5.1 without loosing data.

What is the easiest method for this?

I was going to restore my stock system backup in TWRP and then do the OTA and then do the above procedure again to obtain root.
I wasn't sure if I had to go through this same exact procedure again to go from root in 5.1 to root in Marshmallow or if things have changed.

Just use the latest ruu. Doesn't wipe. Flash twrp and supersu afterwards to RE root

I want to root so I can flash custom rom but can't find instructions on how to do that. Could someone provide simple instructions on how to do that please. Also do I need s-off to flash custom Rom, if so how do I do that?

There is a N00b Help thread that is stickied for exactly questions like these.
You don't need root to install a custom rom. Most custom roms already come rooted. Instructions for flashing them are in each custom rom thread. Basically you do a backup of your stock rom in twrp (select system image and boot), and then flash your custom rom zip file in twrp.

thanks for that, just successfully flashed LeeDroid rom.
