i found 2 gb kernels only the cow thingy and the xxlm8 but my question is , is there more kernels for stock gingerbread rom , for an example i want to change the performence like to smartarseV2 or something like that , .

You can try MIUI with multilanguage support and doomkernel if you want performance.
Or if you want clean gingerbread then you can use cyanogenmod 7.

So I was thinking of flashing either Doomkernel or Lupus and I was wondering what are the advantages of flashing a custom rom other than ability to over and under clock ? Also is stock kernel more stable and should i stick to it or go for cutom kernel ? And which one of Lupus or Doomlernel you recommend and which one is better for battery ? Also Is custom kernel worth it If I am not going to over or under clock much ?
Also more importantly can I go back to stock kernel later if i want ?

Yes u can go back to stock kernel by flashing stock.ftf file via flashtool there is a thread in general with all firmwares. Search for "xperia play firmwares". Also my kernel is based on DooMLoRDs but just updated/few more features. Personally I feel theres a difference. Try it out and see if u like it. If you dont just simply flash the STOCK ftf via flashtool and your back to the way it was.

I like JB Rom layout better (my own preference)

I know it hard to say it, but Solid kernel ( best kernel I've tried ), AK (fine, but still problem with wakelock ) and some kernel like Neighbourhood Hacker's, Smoothcha, matr1x, Glitch, Mirage... which one can be flash without problem ? Anyone have tried it ?
