I am currently on Paranoid Android and I love having YouTube in tablet mode, but I want to go back to stock TW. I was wondering if there is a way to set the DPI and UI mode of an app manually on stock.

that allows you to turn off or uninstall sense and use the vanilla android ui I do however want all the evo this to work hence why i am looking for a sense rom. I would like it to work like it used to when the phone was new before the update.

clear the defaults in Sense UI from the applications menu then install LauncherPro. This will let you set it as a default launcher after hitting the home key.

I downloaded a ROM with the standard CM launcher, but I want the default Galaxy s2 launcher.
Is there a way I can flash the stock launcher, and wipe the CM one?

Since you are running Cyanogen Mod there is no way to get the Stock Touchwiz launcher on your current rom.
You cant run samsung touchwiz apps on a non touchwiz rom. Only way is to go back to a touchwiz rom.
The closest way is to use third party launchers to mimic the look of touchwiz.

I just need to know if I can get the power saving mode and multiwindow feature that comes with default ROM. My device has been updated to 4.4 using cyanogemod and its theme and display is not good.
Can anyone help me getting back the default theme and multiwindow and power saving features.

How did you update? Made nandroid backup? Use that.
You won't get that on cm rom.So if you need them then return to stock 4.2.2 rom.....
You can use touchwiz theme on cm(try it if u wish to get a touchwiz 4.4 ui)
U can't use touchwiz stock rom on custom rom..
