I want to add loop support to my current kernel but I'm not entirely sure how to do it. I've read a few guides online but none have worked.

Hydra kernels are not meant to be used with aosp based roms.

Aside from removing Universal Search, it also updated the kernel, bootloader, and modem. It also updated a number of applications, system libraries, and other files. Some users have reported better wifi stability.
The full list of the files changed by the OTA is here.
I'm still pretty new to this. If I flash a new rom (in this case CM10) does it also flash a kernel? If I am on cm10 and flash a new aosp based kernel and decide to go back would I flash the stock Samsung kernel or is there a special one for cm10?

All ROMs include a kernel, without one it wouldn't boot. If you flash a new kernel after installing CM10 and want to revert to the old kernel, just flash the ROM again without wiping data and it will restore the kernel.

I have no idea what this is and I heard it helps with some issues with cm10 issues. I tried reading through the cm10 nightlies thread but no luck.

get the boot.img of the rom and the kernel you want to use and then repack.
But what use is that? Like what are the benefits of doing it?

You need to learn what the kernel does first, then it should make sense...
