We had screen capture from our fascinates by holding down the home tab and power button, it doesn't seems to work on Dinc2.....does this phone have a screen cap or do we need to install 3rd party?
Third Party app...get the one called "ShootMe". It is free also!!!

Your phone has a built in screen shot app.
You could try this

+1 on that app however running ICS I sometimes just use the built in screenshot within the rom.

Does anybody knows if it is possible to use any of the hardware buttons (like Vol up, Vol down buttons) to shoot the camera (take a picture)?
If you are using CM9, open camera, setting and turn on power shutter. Now you can take pictures with power button

How can I take a screenshot on this phone?
Three ways: hold home and power at same time, use s pen hold button and hold on screen, or swipe Palm across screen (though I can't get this method to work).

For the palm to work you need to cover the sensor and swipe from left to right.

Hold the button on the pen, touch the screen for a second or two (don't move around).
I flashed the PACman ROM to my phone but it doesn't have a screenshot function (Power button and home button at the same time) so I tried downloading a screenshot app from the play store but everytime I try to use it, it always crashes, any ideas?

Another thing to try Is pressing power button and volume down exactly the same time for about 3 seconds works on some roms where power and home doesn't work.

Go to your settings and see if in power settings screen shot option is checked. If its included.
