U must flash either of CM7 kernel or Doomlord kernel to do that, for more details, looking up at Android Dev Section.

I'm going to be doing a quick test on stock rom, but I'm using cm7. If I do a nandroid backup, does it get the kernel too? Or will I have to flash kernel again before I restore?

No, because of how the play is partitioned, it doesn't.

I was just about to post this very question because I knew the Play is different from other phones in that way, and I had a sneaking suspicion that was the case. Thanks!
Every ROM I try it doesn't work unless I restore to a nandroid backup :S
and no lockscreen as well

flash with cwm?if yes then u can use it....
How to install
Backup your apps by using Titanium Backup or similar (for call logs and you can use Call Logs Backup and Restore, and for SMS history u can use SMS Bagkup and Restore)
Use ClockworkMod v5.5.0.4 recovery
Do a full backup of your current ROM
Wipe cache/data/etc
Install Bagux_Project_ROM_v*.zip
Reboot and Enjoy!
Warning: Do not restore system apps' data!

Yes.
To elaborate, the boot partition that is part of a nandroid backup is, basically, the kernel.
I flashed from recovery a zip, install from sdcard. It does not work, so how can I remove it from my phone?

If flashing through CWM failed or not working,nothing is applied to your phone,as far as I remember...
