What are your recommendations ?

Its the process name of TouchFlo.
Rhodium default is Manilla 2.1 I believe.
2.6 is from an upcoming device, HTC Leo.

It is possible.
2.5 is still early development and has some bugs.
2.6 is very early development and has more bugs.
If you have a GSM phone, best way to play with it is to flash a New rom on the phone that has the version you want.
If you want to go that route, read read read:

This works much better when cooked in!
If you have a CDMA phone it's not possible yet to flash a new rom.

Well, a noob Chef here,
I am looking to cook some 6.5 Rom's for a Treo Pro -- But I am at a loss in finding the actual 6.5 ROM's. Any threads which contain solely the ROM's for us to work from?

but ad like to update my blackstone to the new TF3D 2.5

since touchflo itself is not published as cab files to simply install, you need to flash a rom that comes with the version you like. you'll find different roms here: http://forum.xda-developers.com/forumdisplay.php?f=453
