Poco UI will be like a MIUI based OS for Poco devices like what Joy UI is for Black Shark devices.
Poco will be releasing the Poco UI for Poco devices at the end of 2021:

I've asked on Xiaomi.EU forum on the possibility of support for Poco UI and it seems like they will likely not support Poco UI in the future.
Poco devices that do not have Chinese equivalent devices, affected by this change to Poco UI and will NOT receive Xiaomi.EU roms in 2022 and beyond: Poco X3, Poco X3 Pro and Poco M3.
Devices affected by this change, but will still receive Xiaomi.EU rom support in the future since these devices are based on Chinese Redmi devices: Poco F2 Pro (Redmi K20 Pro in China) and Poco F3 (Redmi K40 in China).
The Poco F1 will not be affected by this change since the device is EOL for firmware updates.

What does it mean, if a Poco M3 bought in Europe is to be used through 2022 and beyond? I am not familiar at all with Xiaomi/Poco, hence my question. Will the M3 not receive further ROM updates? Not even security patches? Thanks for your help.

as long as it is stock rom no problem just be sure not to relock bootloader
Xiaomi recently announced the Redmi K40S, an upgraded version based on the K40. K40S has improved charging speed, OIS and VC cooling system, but the rest is the same. Will Redmi K40S be compatible with the third-party ROMs available here? Has anyone tested this yet?
I would not bet on it working out of the box. Manufacturers make ever so subtle changes between revisions.

I dont think it can work, first of all, redmi k40s has a different internal codename so you the rom installation will failed at device checking .-. CMIIW
and Redmi K40S will have a global name Poco F4 (while Redmi K40 is Poco F3) so its a different phone.

Is the hardware of Poco F3 and Mi 11x same? Since I am unable to use Jio 5G on 11x (it needs n28), will it work on Poco F3 firmware, which supports it? Thanks

No, the hardware is not the same. The first indication should be that the Mi 11x doesn't have NFC while the Poco F3 does.
Mi 11x loses some functions/features by flashing a global variant (they can be brought back with root modules but other hidden bugs we dont know could be existent)
