It´s perfectly possible but depends that some developer take interest on the project.
There are some devices out there with OxygenOs and also the chinese version HydrogenOs.
It wouldn´t the same but meanwhile you can try with a GSI https://mirrors.lolinet.com/firmware/gsi/

Do you know that a device specific ROM is more stable and have less bugs compared to GSI because it's optimized for that specific device.
Do you know that a GSI rom have xy bugs on xy devices.

I can see two roms available... Global stable rom and EEA stable rom....see attached screenshot...the comment you linked compare Xiaomi.eu to Global stable rom
