I'm just noticing the phone comes with a lot of google bloat I wish to disable google music / google video.
on any other android phone I just go to installed apps -> uninstall updates -> disable
But on MIUI it seems the disable button is grayed out.
Is there a way I can do this without rooting?

Go to play store> Hamburger Menu> Help & Feedback> Delete or Disable apps on Android> Tap to go to application settings (In blue font)> Find the app and disable it.

I noticed in the app drawer there is no option to hide apps, but there is an option thats greyed out for disabled apps. Is this the same thing? If so, how do you disable the apps? When I tap on uninstall/disable, I only can uninstall the apps.

I don't have the tablet yet but you should be able to disable apps from the Settings > Applications Manager. You can only disable some system apps which you can't uninstall.

I only see Google Now and QMEMO icons on my LG-D885 but I've seen screens where there's the voice app and another on it.
Can I add options to it somehow?

Nope, I'm rooted but I've not used titanium or xposed/xposed apps as yet for tweaking etc.I did flash a new build of firmware (10f) and can't recall if the other apps were showing in the swipe menu prior.
It's no big deal, just a curiosity. I don't even use the apps that are missing either.
Like many I downloaded google play store and many google apps.
I also activated the google now launcher.
1. How do I revert to fire os?
Double pressing home brings up quick switch which has apps but no os option.
2.. In this mode the lock screen does not have 3d even though low motion is on.

Perhaps you want to know how to have silk use google instead of bing?
Go to settings, configure amazon applications , click on silk and choose search engine from bing, google or Yahoo.

I had low motion on and it should have been off.
Settings/Applications/Force Quit or clear data/Google Now Launcher/Clear Defaults

Download home switch application from play store.
Just download any other launcher. Any of them. When it gets installed, press the Home button. It'll ask you which launcher you want to use. Choose any of them, but "Always" must NOT be checked. Then uninstall that launcher. Press the Home Button. It'll ask you again which launcher you want to use. Choose the stock one and name sure to check "Always".
Or go to the Play Store, search for Google Now Launcher and then uninstall it.
Noticed on a phone that I rooted recently for someone else that when I used the kindle app it switched to the fire launcher. Don't know if this works all the time, kindle app would open once I clicked on it in the fire os.

I have a rooted HTC ONE M8 running 5.0.1 and I have uninstalled all those apps I do not want.
However I really want to completely delete or disable the swipe-up from the home button that opens Goggle Search. I find it really annoying.
I do not want to install a custom ROM, ideally I am looking to see which app listed by Titanium Backup I can delete/freeze.

I haven't found any way to completely remove that annoying thing. But I've been using this app to at least disable the shortcut to Google Now, so swiping up does nothing except for the little animation.

Okay I finally found an Xposed module that totally removes that annoying swipe up! Check out Xtended Settings: https://play.google.com/store/apps/details?id=richmondouk.xtended.settings
It's under Button Settings > Enable Glowpad (set it to off) Works perfectly
If I don't want to install last downloaded system notification is there a way to hide it?
I have installed Disable Services and uncheked "SystemUpdateService" under G Services Framework.

the only way i know of to hide it, is to press and hold the notification (or going through phone settings -> apps). unfortunately this would disable all notifications of the google play services.
