I've a Galaxy A7 2017, and I have the warranty. So if i do an upgrade to 7.0 and then (if i've a problem) will I be able to downgrade to 6.0 in case I've to take my phone to the warranty?

Warranty will be fine. But just keep in mind that some firmwares flashed by odin will update the bootloader and you can.t go back to 6.0.1

I don't know man. Pls check the Root/Downgrade thread.
Follow the method suggested in this thread. This works perfectly. And this method is a complete reset of your all device partitions so make sure to backup all your data.
