I got an unlocked note 8, single Sim version.
Question is: if I get a dual SIM tray, is there any way to install the dual SIM version ROM and make it work?

Nope, our Note 8.0 tablets, only support Kitkat stock or custom cooked yet buggy newer MIUI OS builds.

I'm new to the Sony world, my girlfriend bought an Xperia M dual sim C2005 and i want to install a custom rom on it, but from what I see most of the roms are made for the single sim version. Is there such a big difference between the C190x/C200x? Which of the roms from here I could install?

Can anyone tell me why developers ignoring dual sim xperia M for android 5.0?
And just and just releasing for single sim only...what's the problem?

may be you can find why the reason, why PecanCM (Ron Gokhale) still can't release cm12 for dual sim bro.. http://forum.xda-developers.com/showpost.php?p=58278602&postcount=475 just wait for next update or run cm12 with single sim only

No it doesn't. Stop asking for dual sim. Pecan said that he will NOT be doing dual sim. He doesnt have one.
Unless somebody ports it over you have almost a 0% chance of dual sim.

How difficult will it be to make a custom ROM work on D858HK?

How difficult will it be to port a single sim rom to dual sim? I have seen such porting in Moto G forum. I am thinking of getting DUal Sim G3. But I prefer stock android over LG customized one. WIll it be possible to make a cyanogen port to dual sim?

i've to suggestion for you ..
1. CyanogenMod 12.1
maybe you can try this best custom rom with easy modification and continously update. this rom is very light and easy to use for beginner. and this rom have support for dual sim too with xiaomi mi2 patch for dual and this rom have app2sd feature support with android 5.1.1
2. AOSP 5.1.1
maybe you can try this pure AOSP rom with no modification. it's just look like stock android lollipop modification with dual sim worked flawlessly and very light rom too. but i can't confirm with app2sd feature on this rom

As above post mentioned, i've using AOSP since it fast and support dual sim. Don;t forget you must be in fw, 1.5.A.1.5 to enjoy the dual sim support
