Hi i am trying to unroot my htc one m8 and i am stuck because i cant find the version main number. Any help with unrooting my device would be great.

Why do you need the version main number for unrooting??

Based on the above info, I think its one of the following:
4.20.771.2
4.25.771.6
Reason I can say that, is that radio numbers 1.25xxx correspond to version numbers 4.xx. But 4.20 or 4.25, I don't think its possible to determine with the info you have available.
If you are trying to restore to stock using nandroid in order to OTA, it may or may not matter which of the above you restore. My suggestion would be to try one ; and if it doesn't work (OTA fails), try the other.

I have a rooted M8, with TWRP and Xposed, but otherwise stock. I've just had the notification for OTA lollipop update, but when I try to install it, it hangs at recovery (which is custom - TWRP). I figure I've got to restore stock recovery - but which one?
I found the list of stock recoveries linked from this forum, but I've no idea which one I should choose. Does it matter?

I have a HTC M8, currently installed ViperOne M8, ver 1.0 (unlock bootloader, TWRP 2.8.7), after you install Custom Rom (InsertCoin-7.1.1-M7_UL_L50_SENSE70_MR_HTC_Europe_7.19.401.2), wifi does not work!!

There is no working RUU for this device version.
Only non-rooted TWRP nandroid backup available.
You can use either 4.19.161.2 or 4.19.161.3
If you intend to do OTA to Marshmallow, use 4.19.161.3

LOS 15.1 won't work on your current firmware.
Follow this to update your device, later re unlock bootloader & install latest twrp 3.2.x then install any ROM that you like.
