The same way you always could. Unlock bootloader, flash TWRP (AFTER the OTA, cause otherwise it cannot be installed) and then backup system with untouched system image.
No more spoon feeding than done above, as there are threads, how tos and FAQs all over this forum. Just use the forum search and you will find out how it works

Search the nandroid/stock recovery collections, or dual SIM M8 specific posts, to see if anyone posted the recovery you need.
Or extract it from the corresponding OTA file.
Or, if you haven't installed TWRP yet, you may be able to boot TWRP remotely by fastboot (before flashing it to the phone). Then once booted in TWRP, you can backup the stock recovery.

Wrong stock recovery.img
It needs 4.30.401.18 but you installed 4.30.401.16
You can get the right recovery 4.30.401.18 in my thread (post #4)

I have finally installed Maximus HD 21.0.0 on my HTC One x, and installed in order all 3 the official OTA updates,
although at each ota download it would reboot in recovery, and fail to mount the E:/Downloads/Ota...
causing me to have to then manually boot in the recovery and manually install the ota zip files one at the time....
now I am on the version 21.3.0, but at reboot in tells me that a "New Base 4.18.401.4" is available to download, when I try, it does the same reboot in recovery, and fail the E:/Downloads... mounting... when I try manually, unlike the other 3 ota for maximus HD, this one has no file left in the download folder... do I need this download? and if so whats the way round? where can I find the file online to manually download ?

If you go to settings- about- software information, you should see which version you are on, if your on the latest version it will look like my screenshot...

This is the latest available base after updating with the 3 ota updates.
If you keep getting an update message after already updating, try deleting the ota from the download folder, search for updates and if necessary restart your phone.

I'm trying to update my TWRP recovery because I want to go 100% stock. I'm still running TWRP 2.7.0.2. The most recent version of TWRP is 2.8.3.0.
I downloaded the TWRP manager app from the Play store and easily selected the last available version of the recovery to install.
After downloading the .img file, I get a pop up that looks like this:

The pop up says: "Be sure that the listed path is correct for your device. An uncorrect check may result in bricking your device. You can't flash a recovery directly on Android on some devices. If you can't flash through Android, please choose a different method".
It looks like a "routine" alert, but nonetheless it sounds very alarming. How can I say if the listed path is the correct one for my device (HTC One M8 unbranded GSM international version)?

why update twrp ? twrp is not stock ! and you can also fastboot flash it. oldskool way
Because the procedure to go stock requires some flashing and it was adviced to have the latest version running.
I'm not such an expert, I'm more the type who tries to read as much as possible before trying anything, and upgrading TWRP was a sort of "pre-step".
Also I'm not very keen to use fastboot: I got that it is great, but it is not very straightfoward for beginners.
The tool from the Play store seemed to do the job pretty good and easily.

What if I flash a custom recovery over a custom recovery? Is it possible to simply flash it and overwrite an already existing custom recovery?
there is no other way, the recovery will always overwrite the old one. its impossible to run 2 recoveries

Apologies if this is answered elsewhere but I cannot find any information on this for the life of me and it's driving me mad.
I have a notification stating that my 5.0 OTA update is ready but I can't install it due to the Custom Recovery on my device.
I followed this guide (http://forum.xda-developers.com/showthread.php?t=2701376) and flashed the 'stock' (not actually Stock - every link it CWM or TWRP) recovery but it didn't work and the update still fails. I think I read somewhere that something is different about this particular update.. that you need to have an 'untouched'/never rooted device?
Plllleeeeeeeeeeeeeease can someone steer me in the right direction so I can get this update sorted?

ok so you have clean 3.29.401.9 stock rom installed, if not restore the nand available in my thread via TWRP. (may be best to do this as a fresh start)
Next install the 3.28.401.9 stock recovery.img from the first post in my thread.
hoprfully then u should be able to tale OTA automatically

every link is CWM or TWRP are stock Nandroid backup, not recovery.img
Look under Stock Recovery Images for the stock recovery
Thanks for your help, that seems to have done it.
The first time I didn't pay enough attention to my correct Software number (in my case 3.28.401.9). When I matched up my CID (HTC_001) I just picked a random link on that list which is why it didn't work.
Got it going now and back on custom recovery so thanks again for your assistance

You need the stock ROM (never rooted) and the stock recovery for OTAs to work.
You can find a stock TWRP backup of the ROM (change your recovery to TWRP first, obviously), and the stock recovery (for after you've flash the stock backup) in this thread.

You need 1.12.600.20 backup which currently not available.
Make a request in my thread so I won't forget to search thru my hardisk when I'm home later. I believe I still have that 1.12.600.20 backup
Check my thread, the backup now available
Restore 1.12.600.20 backup
Install 4.32.600.2 stock recovery.img (as 1.12.600.20 recovery.img is not available)
then you can do OTA update to 4.32.600.2
