Heey, i need some help, when i download CWM on my phone i get this notification (screenshot) and i cant make a backup with this version, can someone help me?

try to backup from recovery mode with philz kernel

which is best odin version to flash 4.3 to note 2 n7100 ??? 3.4 ,3.7 or 3.9??? and which odin is good for reverting back to 4.1.2??

The best way is to use the newest version but I'used 3.7. I had CM Rom and reverted to official samsung firmware.
I Just Installed CM11 4.4 Linaro on my galaxy Note 2 GT-N7100
and I want to get back to stock firmware 4.3
can you help me plz ?

As simple as downloading the correct rom for your carrier from sammobile.com and flashing it using odin 3.09

For stock ROM see this. Download, flash using Odin and root it using this guide.
Use this link for pre-rooted firware, but u have to flash these using cwm recovery.

NO, you can only install a firmware for shv-e370k
