Is there a way to change the reported device type (probably in some configuration files) so that we don't need to edit the script for each CM version upgrade?

yes. you must backup imei and modem before flash any rom. just need unlock bootloader and flash cwm 6.0.4.5 e975 for f180 and you can flash any rom of e975, without change "updater-script"

j you can push a rom zip to your device through adb and twrp supports otg as well.

But then how would the phone work if you don't restore system? Is it like you have already flashed the rom you want to restore and then just restore data and other partitions?
