Is it possible to extract the stock radios and kernel from my phone? Wanted to work on some side stuff and have a way to go back to stock if needed.

wat do u mean by the original rom? Are u talking about stock 2.1 or stock 2.2?

You'll probably want to get DI18 image instead of DG27 and the follow the instructions in that thread.
Why do you want to go back to stock rom?
the best way to go back to stock is to download odin and here the tar file http://forum.xda-developers.com/showthread.php?t=794138
You probably also want the 512 .pit considering that is basically the formatting map for the rom, the kernal, and the modem.
Hey guys. My phone is rooted and the bootloader is unlocked. I have a cutom rom and I have no back up of the original one... I want to go back to the ORIGINAL FACTORY SETTINGS ****. I tired downloading googles stock thing but its a .tar and I need a .zip to flash it...
Extract the archive, it contains img files for the ROM, kernel, bootloader, etc.
Or use the GN Toolkit, it does everything automatically.

Would it be safe to use PC companion if I flashed a Stock GB ROM onto my phone but had a custom Kernel (say stock with CWM) still on the phone?
Or do I need to find Original Stock and Original Kernel?
If it's a gb kernel then it should be fine. Though you'll probably need to flash the appropriate modules after the rom.

I wish to extract the modem for my stock un rooted rom, but don't know how. I am assuming I back it up extract the backup file look for the modem file and take that out, and then what? re-zip it? if thats the method which backup process will allow me to back up and access to the whole rom?
