I've found a lot of list from other phones, but none that are evo specific (not sure if it matters)
So far I've removed:

HtcFootprints.apk
HtcFootprintsWidget.apk
HtcTwitter.apk
SprintTVWidget.apk
Sprint_App_Updater.apk
Sprint_TV.apk
Sprint_NASCAR.apk

Sprint_Promotion.apk
Twitter.apk
com.amazon.mp3.apk
com.htc.TwitterWidget.apk
com.htc.StockWidget.apk
teeter.apk
sfl-prod-release.apk
Are there other apps such as Friendstream/Stocks that are safe to remove? Just want to be sure before I do anything. Thanks for the help.
Im guessing you must be rooted to do that.
Yes friendstream and stocks are safe I removed them.. I liked the system app remover app. For a Buck its nice and don't have to search for it in a explorer.

I like doing things in a bash Guess I'm just used to it from my linux days, heh.
Also, thanks for the info. I think I deleted something wrong...
I removed the following apps and now my accounts and sync is stalling.
DCSStock.apk
FriendStream.apk
Stock.apk
com.htc.FriendStreamWidget.apk
I think it might have been DCSStock.apk. Going to try to back it up and see if that fixes it.
[Edit]
Anyone have a copy of DCSStock.apk (OTA rooted 2.2 for EVO)? I fail at backing up. lol

ADB
You can always just use ADB to remove as well. Just as easy. Just remember when using ADB to remove unwanted apps to remove the apk as well as the odex file (if applicable).
The sync lock is caused by friendstream.

I used Titanium Backup to remove some like Amazon MP3, Nascar and Football and everything was fine. Then I used Titanium to "freeze" a whole bunch of apps, and my phone started acting flaky--sense seemed to crash & restart, and once my phone just rebooted itself while sitting idle on the desk.
I unfroze all the frozen apps and it's working fine again. Was the "stocks" app causing trouble, or was it friendstream? I'd like to get rid of both...
Also, do I need both "Facebook" and "Facebook for HTC Sense"? Seems like it doesn't work right with either one frozen.
The stock .apks are safe to remove but don't mess with friendstream, for some reason HTC really made it an integral part of Sense, the widget is safe to remove, but not the friendstream.apk it self. As far as I know (someone can correct me if I'm wrong), you can delete both Facebook and Facebook for HTC and re-download them from the market if you want, I've seen a lot of ROMs ship with both removed.
Here's a good post that has a (WIP) list of apps and what they do...

Hi all - I just rooted my US-model AT&T GS3. What pre-installed AT&T crap can I safely "Chuck Norris" with Titanium?
Thanks!!

Look into the dev threads for ROMs. You should be able to see the list of apps the devs have deleted (you should be able to find this in the OP in the list of apps taken out).
Since you have TiBu, and seem fairly new here, I would recommend you freeze the apps in TiBu rather than delete them.

It depends on which APK's you use E.g. Calender, Samsung account etc but I will try and write up a list of "safe to remove" APK's.
I know this answer wont be much help! But give me a bit of time and will get that posted.
It is easier for me to write down what is left on my system
So, here it is. Every other .apk and it's appropriate lib has been removed from my system folder. I have also deleted kies folder from system/etc and samsung tts folder from system/tts. The only thing that is broken is settings/about device/ system updates, if you try to open it settings will force close. That is not an issue for me as we are never going to get any updates. Some of the apps below can also be deleted (such as the calendar, clock widgets, wallpapers, fm radio etc.) according to the users preferences. Also, don't forget to replace the crucial apps you removed, like in my case TouchWiz Launcher and Keyboard, with the alternative ones. I have not removed gapps completely, just the apks, so I could easily put them back if I need to (I only need play store from time to time, and the phone runs pretty smooth and fast without them).
List:

Try this.
Finally, I've tried to delete those bloatwares according to the reference above, I mean, you know, I left listed bloatwares on my phone.. and it really is surprisingly amazing..
no lag, more responsive, etc..
however (there's a however), I have this LINE app, I'm sure most of you know it, it wouldn't work anymore.. when I open the app, it just blackscreen and return to homescreen, or shows pop up that says "unfortunately LINE has stopped responding; wait ok" something like that..
what to do?
thank you in advance,,
cheers..
update: now, even google play won't work..

Just tried it. LINE works great without Gapps. Even tested Google Play. Google Play works when I push Phonesky.apk, GoogleLoginService.apk and GoogleServicesFramework.apk back to system folder. You must have done something wrong when removing bloatware.

You could try to leave Google Play Services as well. I cannot remember the exact name of the .apk file it is something GMSCore.... They automatically install on my phone when I start Play Store.. Maybe that is the issue. Also, try clearing the framework and play store data and then reboot your device.

Try "Clean Master" free from play store this allows you to remove a lot of bloatware.
Titanium back up will do. It'll let you back up what you wanna delete, I would recommend freezing it first before uninstalling, cause if your system becomes unstable you can just restart your tab to working order.
Must have root tho

It would take me some time to list all the system apps that I have deleted. So instead, I did a screen capture of those system files I kept. One day I deleted some off this list and ended up having to reload from my last backup. So I must have deleted something I shouldn't have. Anyway, I am sure there are more that can be deleted but right now this is what is running my P5210.
I used NoBloat Pro to do my house cleaning. But the biggest thing is even before doing anything, I loaded TWRP, Rooted, then did a backup from TWRP. That gives me a base level to work from. After cleaning some obvious files off (Printers, Fonts, Google apps that I just do not need) I would do another backup. Then I would continue after making sure the Tab was still working. I think I did 6 or 7 levels of backups before I crashed the tab and had to move back one level of restore.
This is not the end all of cleans but at least it will give you an idea of what I think is bloat.
Remember: These are the files that remain on the Tab. Not the files removed
Disclaimer... If you copy what I have and you end up with a damaged or unusable P5210 device, I am in no way responsible. This works for me and how I use my tab. It may not work for you.
Good luck
