Okay... From my experience on other android phones.. Samsung note and note 2..
Stock roms rooted doesn't mean that installing fonts from rom toolbox or the likes would work throughout the phone...
But my girlfriend has today acquired an optimus g e975 so I would like to enquire if rooting and using font changer in rom toolbox change the fonts throughout? If not what are her options of changing fonts?

Untrue. Im using rom toolbox pro and I have been able to change the system font.. it wont change everything obviously but it does change messaging, etc

Font Changer will change the font as long as you are rooted. But you have to change your font choice to Roboto on the phone settings.

There are numerous notification toggle apps in the Play Store. Modding system apps on an odexed stock ROM would be difficult at best.

That, you either need mod or custom ROM that supports it (Such as AOKP)
However, I don't think there's a mod for odexed stock ROM that does that.

Jepp RoM Toolbox can change your Font. Tons of fonts to choose.

Maybe you should give us more details on what you are trying to do.Rom toolbox has a great collection of fonts,same with fontomizer.If you are not happy with it,maybe you should consider start developing yourself or change the phone.
Neither fontomizer or ROM toolbox worked.
And I am simply trying to change the system font, without root preferably. As I unrooted due to temporerarily bricking it.

Not sure if anyone has tried it yet, but I am a big fan of split screens in Gmail and settings. I used Xposed with the app settings apk and changed the dpi and dp and was able to get split screens. See screenshots below. Used 300-350 for the dpi and 800x1280 for the dp.

I think you are the first time to use dpi setting apps... It works on any device with any rom for long time ago, not only our G Pro. For "split screens", it depends on apps' resources supporting tablet layouts or not.

That was just the center clock, but I'm running cm10 with custom fonts from rom toolbox.

Did you go back into the Xposed installer and install it? Also did you go to the second tab of the installer app and activate the Xposed mod?

Just wanted to say i got this working on stock rom. i was able to change gmail, browser, contacts etc to the split view> let me know if anyone needs help.

You'll probably have to be rooted and running a stock ROM, or just the LGHome. Push the files to /system/app and reboot.

It is imbedded in the Frameworks and system ui, you are not going to get it to work easily, a lot of re coding would have to be done. Many other DEVs have tried and gave up. Search LG Weather widget for CM11, there is a working one from the LGOG, only issue is it is only 4 columns wide.

Found this link and wanted to share. I am using rooted stock Rom. Just install launcher apk. You can use xposed framework modules to modify the launcher grid size. All credit to the people who brought this apk.
