How do I look up what version of TouchWiz I'm using from the settings menu, or is it even possible?
Is it impossible to set up different sets of home screens/wallpapers like on a Sense device?

If you go to app manager and find touch whiz it'll give you the version. And I believe you cannot set home screens like Sense does.

My phone isn't rooted and I managed to get the wrong asp from market but when I try it it works great. Didn't need to root my phone. I also understand there is a screenshot it app for non rooted phones. Just thought if some one else it there has noticed this.

You can just hold home and power at the same time and use built in screenshot app. No root necessary..

I remembered having this version of YouTube in tablet mode on one of the Paranoid Android Roms. Was just wondering in there an apk for this?

Never mind figured it out, by playing with the app settings. By the way, the new layout for YouTube sucks!!

Does anyone know of a way to get the keyboard from the evo onto the s3.

Try smart keyboard pro if t9 is your goal; it's on the market.

Is any way to have video call option enabled in the phone keypad like S4 have?

You could try some of the ROMs that contain alot of the s4 features (search the development threads, both original and other) or just download an app like skype.
Cheers
