I've done a full GPE conversion, with S-OFF, but I am unable to flash most of the 5.0.1 ROMs. They flash fine, but get stuck on the Google splash.

You need to update your firmware, as most (if not all) Lollipop ROM threads clearly state.

I like to flash newer firmware to update my rom to 5.x.x. Without that i got wifi or gsm problems.
you have exactly 2 options :
1: put the phone in stock state and update as far you can (4.4.4 hboot 3.19 for sense)
2: use sunshine

My HTC works only in bootloader mode. When I select recovery phone turned off and restar to bootloader mode. All is stock.

Download this Stock HTC RUU (matching your current firmware):

Flash it from recovery!
Lock your bootloader afterwards.
Profit
With s-on, you need to relock the bootloader first in order to RUU using the command:
fastboot oem lock
Then run RUU exe (PC required, Win7 and USB 2.0 preferred) with phone connected and booted in OS or bootloader-fastboot mode.
