Just out of curiousity, I probably already know the answer to the question, but is there a way to hide or block your data usage from Verizon?

Search for "fing" in the market. Gives you all the network info you'd ever need.

The idea behind OPs post is ease-of-use with one hand. Why not just use multi-view feature and load all the apps you need?

I have recently installed Jedi mind trick x1 and it came with a Wi-Fi calling feature. It hasn't worked and I get a error saying bad sd card. Any fix to that issue?

They're supposed to, the policy says they service rooted phones but some stores for some reason still don't do this, like the store I go to the guy said he can't service it rooted but he'd let me slide that one time.
