Did you run "gfree -f" as part of your rooting process ? Because that does the SIM unlock, radio S-OFF and SuperCID. If you are back to S-ON with just a flash then that sounds like if you had S-OFF before then that was only via eng hboot and not gfree.
The only way to SIM lock again is to restore the backup of your radio config partition. In the latest gfree there is an option to do this, or you can do this very carefully via "dd".

no i rooted through gfree i just could not find a way to unroot so what i did was i followed the unlockrs tut to unrooting but my s would still be off so i temp root again usuing rage then s on and flash the ota update would that get everything back to normal or would i have to manually set superCID and simlock
ps the method that the unlockrs use is the hex editor and the PC10IMG.zip and miscnew file pushing

I looked at my friends phone in Bootloader:
Vision PVT SHIP (I take it that's original bootloader)
S-OFF
HBOOT 0.85.005
Device was rooted with Visionary and has newest Virtuous ROM on it.
Need to restore to Bell original.
User doesn't remember EVER uploading a new bootloader / eng / spl any of that.

Should be the same process but with different Firmware of course (Bell rather than the TMobile G2 Firmware)
Visionary can unroot the phone...but will I be able to boot back into Virtuous after unrooting? Can I not just run the RUU after using Visionary to unroot? Those are the concerns I have.

Problem is that as far as I know we don't have an RUU or ROM image for the shipping Bell ROM. Before you flash any custom ROM you should always do a nandroid backup so you can easily restore. If you don't have a nandroid backup then all you can do is return to a pre-release Bell ROM.

So this morning I decided to root my phone after being a little hesitant at first, I used the rage/hboot wpthis method (from this thread: http://forum.xda-developers.com/showthread.php?t=834228). Later today I came across what looks like another method, with gfree with the hboot being optional.
Now I'm worried I might have used an outdated method perhaps. Is that the case? What are the differences between the two methods, and would it be advisable and possible to reverse my previous root and do the new method? How would I go about doing so?

You should do the gfree method, *but* you don't have to reverse your previous work. Just follow the steps for gfree rooting, and skip the steps for temp rooting.
Here's why you should use gfree instead of the rage method:
Gfree actually sets the phone's radio to s-off. So if you ever decide to go back to stock, you can just flash a stock rom right over it. If you tried that with the rage method, you would brick your phone.

Actually, the full rage guide set my phone to S-OFF as well, but I still installed gfree on my phone just in case.

Ah okay, though would doing the gfree method with the hboot previously still give me issues if I ever wanted to go back to a stock rom in the future?
Well never tried rage but the gfree method is the safest. Any how i did the first prem-root and s-off method useing visionary and using terminal. The only down side of it is if you wanna go back to stock rom you need to do some hex editing to downgrade and stuff like that.

This is not true S-Off. It is a fake S-Off achieved through the used of a hacked eng hboot. The Gfree method gives you true RADIO S-Off.
Like ibemad1 said, if you tried to go back to stock by flashing a PC10img with just the rage method, it would brick your phone because it would remove your hacked bootloader, and it would fail to fully revert to stock, leaving you with a nice paperweight.
The Gfree method prevents this from happening and you can flash the PC10img without worries of bricking. In addition, gfree gives you supercid, as well as sim unlocking your phone.

So if you used Rage first then ran the last part of Gfree to turn Radio S-off would that make it okay to flash stock without bricking

Yes ,if you only have the "fake" S-OFF via the eng hboot, I strongly recommend you use gfree to get full radio S-OFF. This is a *lot* safer, because if you flash a stock ROM with only the "fake" S-OFF you can easily semi-brick your phone.
It is a lot harder to mess things up with full radio S-OFF via gfree. See the Wiki for full details.

This link is first of all for the G2 and not the Desire Z and it is rather old.
But the principle is the same.
- Get a stock rom RUU file that fits you phone. See http://shipped-roms.com/index.php?category=android&model=Vision
The version of the rom that you select should be equal or higher to the last stock rom that you had installed.
- Install the RUU file from Windows
This will bring everything back to stock and remove root.
But the phone will still be S-OFF and Super-CID because the rom does not change the radio config partition.

Awesome, this is exactly what I was looking for.
The only question I have is: when you say use the RUU from windows won't this brick or semi-brick my phone? I'm just asking this because I read a lot of posts about flashing a stock rom with root and don't (obviously) want to end up with a brick...

My phone broke and now I want to try to get it fixed with warranty. I'm not sure if warranty still is available if I use root so I want to unroot.

And what will flashing it do? Will it remove CWM and everything else I was using to root? I remember that I flashed radio 2 times, had S-OFF and E-ON.
And then I will simply run System Update? Because it seems that RUU are firmwares that phones are shipped with.
yea, just flash a RUU.
Make sure you install the original RUU for the type of your DHD (i.e. WWE, Voda,T-Mobile...)
and if your phone is S-OFF, make it S-ON - S-OFF / S-ON GUIDE (guide for S-ON is at the end of the 1st post). Go into bootloader and make sure you have S-ON
--your recovery will be restored to original HTC recovery
Oh, but which RUU I need to flash? I remember I needed to do a downgrade and I think it was 1.72.405.3, not the R2, but I'm not sure.
Well, when you had your phone, was it branded?
if so, you need to find a brand-specific RUU.
If not, then WWE RUU is fine.
i would suggest the 1.32 FW (because S-ON requires temproot from Visionary+), then follow the guide to S-ON
What about radio? I have flashed the leaked gingerbread radio, wouldn't they be able to see that I have flashed a newer radio? Or the RUU flashes radio also?
RUU flashes radio too. But after flashing the RUU have a look into the bootloader, the device might still be S-Off. For S-On you need to root again and Use the easy radio tool to make S-On again. Then use the RUU again.
It still was S-OFF, but used Visionary and Easy Radio Tool to get S-ON. A brand new phone

I previously rooted and S-OFF my phone by downgrading from 1.72 to 1.34 and using gfree.
But my phone broke down and I just received my DZ from after-sales service, with stock ROM...
So I have few questions:
- I tried to root it with HTC super tool v3. I was not able to perma-root my DZ until I unlocked the stock bootloder using htcdev official method.
So I succeed in writing the system partition. But now i cannot flash a custom recovery (using ROM manager). S-off is only for bootloader/radio, so I should be able to do it with an unlocked bootloder, even if i'm still S-On, right ? What should be wrong?
- Now, if I want to S-off my phone, I must downgrade the radio to the one from 1.34 to use gfree, right ?
- What is the advantage of flashing an eng-hboot rather the official/unlocked one ?

Check out my guide for htcdev unlock here, it'll explain how to flash a recovery.
To S-OFF you will have to relock the bootloader to downgrade, then use gfree.
Eng hboot lets you use a whole bunch of fastboot commands, and can help you fix your phone from a SOFT brick.

But just to be sure I understand everything, I there a reason why I cannot flash the recovery after rooting the phone ? is there some kind of hardware lock enabled because of S-on ? in my case, is there any difference flashing from fastboot rather that ROm manager ?
And about the official unlocked hboot, Is there some kind of signature check when flashing that engineering one does not have?

The emmc still has write protection if you use the htcdev method, so recoveries (and kernels) can only be flashed via fastboot.
So you cannot use Rom manager.
If the phone is S-ON it will perform a signature check, and only flash official HTC signed roms. S-OFF will let you flash any rom.
