It's not quite simple but it's possible with a bit of editing of framework and maybe a bit more.

Hi,
is there a way to make the colored HTC Sense buttons grey/black like they were before? I think that looked much better. I guess you just have to find the image files and then recolor them right?
I also like the black/white buttons better.

Hey, I have the same problem as yours!! What did you do?? Plz. tell me, I want to change that background to Grey Like ICS.
I recently flashed a theme from here: http://forum.xda-developers.com/showthread.php?t=852021&highlight=lucid+theme to my Evo, but nothing seems to have changed and everything still looks the same. I'm new to anything involving a Rooted phone so I don't know if I am doing something wrong or not.

First of all welcome! If you flashed the theme in. the recovery menu then you should be good to go. Try nandroid restoring and flashing a different theme, the theme you picked could be corrupt. Also try reflashing.
Also I noticed the page where you downloaded the theme states this "
These are ports of my Nexus One themes. I don't have an EVO 4G, so please test and post results."
So its likely they don't work...its ok because there are many other themes out there.

Alright thanks I'll see if that works.
Now I can't get the app icons to change, can someone walk me through the process becuase this is my first time flashing a theme and changing the icons.

To change icons, you need a launcher, adw, launcher pro, ect and you can change them their, or use desktop vizualizer [free from the market] and change them individually.

On your dock, if you long press you icon for something, it'll give you the option to change the icon.

I got it now. Thanks, I thought it had to do with something in the settings menu but I just couldn't find it.
So I decided to get an LG3 and so far I am pretty satisfied. However I can't change the contrast/sharpness. I am getting the feeling that this is intentional. Or am I missing something?

I for the life of me can't figure this out, and searching for the last hour has yielded me nothing but sweet screenshots of people without this shadow. I'm rooted with s off, currently running viper one. If someone could point me to a thread that would be awesome.

Don't use this mod on Viper ROM... It will break ROM functionality.
