I think since it's almost the same hardware it should theoretically boot but you will definitely loose nfc.
I have tried, you may brick your device!

It is okay to flash EU ginkgo in Willow. but inorder to flash it the updater script should be edited to remove the device check for Ginkgo (the assert line).
But keep in mind that doing unnecessary edits will cause problems. You will lose NFC support if you use Ginkgo EU in willow as Ginkgo doesn't have NFC hardware. Do a small research on editing the updater script .

do not do it you will make a brick, if you want to do it, you only have to flash boot, system and vendor if you will not make a big brick that you only recover with an authorized account.

you may fastboot flash stock ginkgo system.img, it's ok. but the eu ginkgo will brick your device!

I have a Poco F3 but i dont know how to update the phone to miui 14? i was told, that you have to update the phone yourself by flashing it?, Is that true??

Believe me, there is no major differeces betwwen miui 14 and the previous 13 on poco devices, but it's noticeable in xiaomi . So, I suggest to install xiaomi eu rom of xiaomi k40. and there is another good rom is called miuivn rom.
I suggest you dump that tracker loaded OS period and install a aosp rom Like Arrow
If you are in global miui the only good feature you can get is copy text from an image in my opinion. But if you want to experience all the miui14 features use xiaomi.eu
