Updating the Android Version to latest posible

Not sure if I am asking the question in the correct place?
I have a Samsung Galaxy Tab S - model number SM-T800 - running Android 6.0.1
When I check the updates it says it is up to date.
I would like to download an Application - Imaging Edge Mobile from Sony, so that I can check photos and videos taken on my Sony camera HX60V - It says the software is not compatible and I require Android version 7, at least, to install the software.
How can I update the Android Version on my tablet?
First you must unlock bootloader
1. Download ADB AND MINIMAL FASTBOOT On your PC
2. Go to Settings -> Devleoper Option -> Oem Unlock Turn ON and Turn ON Debugging USB
3. Connect to PC and type adb devices - Now allow for ur PC debugging on ur Tablet
4. Type adb reboot bootloader or adb reboot download (Try first bootloader) - Unlock Your Bootloader
TWRP
1. Download TWRP.tar (https://twrp.me/Devices)
2. Download ODIN3 (https://odindownload.com/download/Odin3_v3.14.4.zip)
3. Reboot your device to download mode and Open ODIN3
4. In AP section in ODIN3 select TWRP file, and flash it.
ROM
1. Configure your phone, download ROM with latest android for your device and flash with TWRP
SM-T800 is an old device and Android 6 is the last version Samsung supports. To get to later versions of Android, you have to flash custom rom. As @Trevorek stated, you need to flash a custom recovery, then custom Rom to the device. The current best one is Lineage 17, which is Android 10. Here is the thread and it works well on T800.

Congrats on building it
Good job. Congratulations. But there is still work to be done to be able to use it for daily work. I have tried it and I think it is good and once the bugs are fixed it will be usable.
