Will the Verizon Galaxy Nexus be compatible with VoLTE like the HTC Thunderbolt once Verizon throws the switch?
What makes you think the Thunderbolt will be VoLTE compatible? Is there a statement regarding this somewhere?
Nexus is a 3GPP Release 8 LTE UE Category 3 device. Rel. 8. supports IMS, which is a generic platform for media applications including (but not limited to) SMS,MMS, VOIP (which is all VoLTE is) and video calling/conferencing.
HTC Thunderbolt is also a Rel. 8 device. It also supports VoLTE. Nice thing about IP-based networks is that it doesn't really care what you're trying to do. It's all just data.

I'm heavily considering moving to the Nexus 7 as my full time exclusive device, and utilizing a VOIP such as Google Voice for calls (I'll still have a phone around for lengthy calls if need be). Going this route I'm looking at the LTE supported model. I noticed on Google's site, they list an AT&T, T-Mobile, and non carrier specific option. Are there actually any differences in these as they are all listed as unlocked?
I couldn't find any differences. There is a non-4G Nexus, a US-4G Nexus and an international 4G Nexus. Those 3 models.

I believe that the options for T-Mobile and AT&T listed in the Google Play store are so that you can buy the Nexus with a SIM card pre-installed from either T-Mobile or AT&T, but both have the same radios. The only difference between the two LTE models seems to be that the North American model connects to bands 13 and 17 (Verizon and AT&T, respectively) whereas the other model (I'm assuming that's the "unlocked" model) connects to 7 and 20.

In short, it's definitely impossible. The GSM phones do not support any CDMA2000 2.5/3G frequencies which is what the US CDMA carriers use exclusively for voice and SMS.
Even if the T-mobile model supported the necessary frequency bands / CDMA2000 standard, Sprint would never allow it on their network. Sprint and Verizon only allow their own carrier branded phones on their networks. They each have a database of IMEIs for every phone they've ever sold. If your phone isn't on the list, they won't allow it on their network PERIOD. It doesn't matter if it's fully hardware compatible. They want to control every aspect of your mobile experience to extort more money out of you.
Don't get your hopes up, fellow Sprint customers.
This phone is gearing up to be another LTE-limited Sprint-only type phone, similar to what they do with most of their other phones. I'm speculating based on the fact that there is currently an unlocked version of the phone listed at B&H:

Nowhere in the specs and description does it list anything about Sprint support and there's no indication that Sprint will even activate this phone. If for some reason Sprint does decide to activate this phone, it's missing LTE bands 26 and 41 which means you're stuck using band 25 only for LTE connections in the US.
I think it's reasonable to assume they will disable or leave off LTE band 7 and possibly 13 and 20 as they did with the recently released Samsung Galaxy S7.
This means the probable Sprint-only LG G5 might be partially crippled for worldwide LTE bands, assuming LTE band 7 is not included, but will mostly work with Sprint domestically.
As of right now, if you're looking for the most widely supported phones for international use that work with Sprint natively, which include LTE band 7, you're limited to Apple iPhone 6s, Motorola Moto X 2nd gen, and Nexus 5x/6p.
Edit 03/24/2016 - Phonescoop.com is reporting that LG is adding LTE bands 25, 26, and 41 to a base model but no report of getting rid of band 7.

Verizon uses LTE bands 2, 4 and 13. Sprint only included band 4. So while it's theoretically possible, there's no telling if all three bands are active on all Verizon LTE towers.

Don't count on it. Very unlikely.
HTC has T-Mobile variant on their website, but I wanted to purchase an unlocked HTC 10 instead and need a confirmation if it will support T-Mobile's features. Main things are: Band 12 and VoLTE, but if it also has WiFi Calling, then even better.

i have an international unlocked and was able to see tmobile band 12 when i was in area that supported it. at the time, i had loaded the US unlocked rom on it.
I purchased the unlocked version and am able to use Wi-Fi calling on T-mobile. The signal is really great too, even indoors!
It is good to know! Thank you all! Do you guys have any feedback about the device? I did read reviews and watched videos, but they usually don't cover much. Are there any issues that HTC hasn't addressed yet and that potential buyer should know about?
Having purchased mine a month ago, I love the phone. Compared to the m9 I had, this phone is amazing. Battery life is surprisingly great, runs quick, takes great pictures, and I have not had a single issue with it. Wi-Fi calling with T-Mo works well. You'll love it.
The unlocked version of this phone doesn't seem to be compatible with Verizon's 5g mmwave and many features like wifi calling, hd audio, and hd video calling are not available on the unlocked 5G like the original Razr that was a Verizon exclusive. Any help is appreciated. This is highly frustrating. Just don't know why these features can't at least be enabled while just using 4G LTE.
Wifi calling is unsupported by verizon on their end, mmwave is unsupported because afaik verizon is the only one that tried pushing for it. As far as hd audio I'm assuming you're talking about VoLTE which mine does perfectly fine on Verizon, you may have to call verizon and have them switch your line to LTE only as that's how my line is set up due using oneplus devices. As for video calling I'm really not sure how any of it works, I thought it gets routed through duo?
